We are pleased to be media partners with the Independent Hotel Show, London which takes place next Tuesday and Wednesday in Olympia.
The show has an ESG Hub with activities and advice available as well as panel discussions and debates. I will be there moderating ‘The sustainability showdown: How on earth to make it work’ with a great panel discussing ESG insights and offering practical guidance and real-life case studies.
Some great news for the industry this week came with the launch of The International Centre for Responsible Tourism global (ICRT global) with responsible tourism expert Debbie Hindle and Emeritus Professor Harold Goodwin at the helm. ICRT global will offer bespoke and online training courses and guidance to Universities on responsible tourism across the globe.
And we had a superb guide to food waste with a visit to the London Heathrow Marriott hotel, which is one of 53 Marriott hotels in the UK that has reduced its food waste by 25 per cent with partner Winnow over the last six months. For a detailed look behind-the-scenes at this technology and how to create zero waste menus see the story below.
Make sure you sign up to our next live webinar, The Sustainable Hotel Exchange: Storytelling Matters. We have some fantastic experts talking about how hotels can better talk about their responsible initiatives, the impact of the Green Claims Directive on a hotel’s storytelling, and how to manage concerns around greenwashing – and greenhushing. There is a sign up link at the bottom of this newsletter.
Until next time,

Marriott Hotels UK, Ireland and Nordics has significantly reduced food waste across 53 managed hotels in the first six months of this year.
The group has partnered with Winnow and its AI technology to monitor and minimise food waste in 53 of its hotel kitchens, training staff and educating teams and guests on circularity.
Over six months (from January until June) the results showed the hotels had reduced food waste by 25 per cent. What does this really mean? Before Winnow came to the hotel, the Green Key accredited property was already practising sustainable food initiatives such as meat-free Mondays, an a la carte breakfast instead of the buffet option, smaller plates, and so on.
The difference is now the data from Winnow’s reports for this period can be used as a benchmark for future food waste reduction for all the hotels taking part.
According to Marriott, with the support of The PLEDGE, a global food waste certification, it has become the first hotel group to deploy AI food waste technology on this scale in the UK.
Sheena Williams, cluster general manager UK, who was instrumental in leading the Winnow integration for the hotels and achieving the food waste certifications said the technology had “changed the way we work for the better”.
